2009 Celebrity Guest Chef Series in June
June 30th  Farm-To-Table Dinner  $75. per person includes dinner and wine

The 3rd  annual celebration of local farmers hosted by Christina and Bruce Orchid at Red Rabbit Farm. The menu will  feature the best of the season in locally grown produce, meats, and dairy, connecting us to the bounty and community of our beautiful island. 

July 14 (rescheduled date) ,…. Scott Mangold, is owner and chef of  the very popular BreadFarm Bakery in Edison WA,  which he founded with  his wife Renee in 2003. His baking career began at the Black Bear Bakery, a certified organic artisan bread bakery in Portland, Oregon. Scott polished his baking skills at Grand Central Bakery both in Portland and Seattle. He also attended classes at the CIA Greystone, the National Baking Institute in Minneapolis, the Ritz Escoffier in Paris and the San Francisco Baking Academy.  Scott will be teaching the fundamentals of making artisanal- style bread at home. Each student will take home some naturally cultivated sourdough “starter”. www.breadfarm.com

This year let’s go local….

Christina Orchid   Former chef/owner of Christina’s Restaurant. Christina now instructs budding chefs at Seattle Culinary Institute. She will be teaching a four week series in May.

May Series   

It’s all about a new way of cooking. Five ways;  A chicken, A salmon, a cut of Pork. Five meals for four people that are delicious, tasty, economic and easy. Then the series is capped off with the Brown Bag Cook-off.  Learn how a chef thinks on the fly, how to create meals from what is in the pantry, the garden or the farmers market.

May 5, One Chicken  five meals  for 2-4                      

  • Vietnamese style Chicken Salad

  • Ravioli with Chicken, Chard, garlic

May 12, One Salmon (9-12lbs) five meals  4-6

  • Planked Filet with herbed aioli
  • Salmon and squid ink fettuccini
  • Crispy Salmon Basil Cakes
  • Smoked Salmon Chowder
  • Jansens’s Temptation

May 19, One Pork Shoulder   Five meals  2-4

  • Roast Pork, island fruit chutney
  • Pulled Pork Sandwiches
  • Sweet and Sour Pork
  • Sausage and Clams
  • Meat Loaf to die for(or kill for)

May 26,   BROWN BAG COOKOFF

Demonstration of “Chef Think” Watch and learn as a chef empties a shopping bag filled with unknown ingredients for a meal.

Cost per class $100.

Include demonstration, Dinner, and Wine
